In 1837, Callington Mill was built for two reasons - to legally grind flour and to illegally made whisk. Nearly 200 years later, we're proud to present our flagship single malt whisky, made with local barley and pristine highland water perfectly crafted, perfectly legal.
Our Whisky Flight contains:
El Sol - Matured in ex-Sherry fortified wine casks from Jerez, Spain, El Sol is a well-rounded, rich, smooth, and complex whisky that celebrates the bright summer sun of Jerez de la Frontera, Andalusia. The oak casks, previously used for maturing a variety of Sherries such as Oloroso, Pedro Ximenez, Amontillado, Palo Cortado, Fino, and Moscatel, impart a luscious and full-textured profile to this single malt. El Sol boasts an enticing aroma of flavours of dried fruits, crème brûlée, coffee, cacao, and dark chocolate, culminating in a lingering finish that captivates the senses.
Fusion - Introducing a velvety rich single malt, dark in colour and matured in ex-fortified wine casks from Spain and Portugal. This exciting release is a marriage made in heaven, marrying the flavours of whisky matured in ex-Port and Sherry Casks - delivering elegance and complexity that explodes on the palate. Experience the delightful combination of cacao and dried fruits, followed by a tantalising finish of spice and vanilla. A melody of flavours that will leave you salivating.
Invicta - Introducing a full-bodied, rich single malt whisky, matured in ex-Port fortified wine casks from Porto, Portugal. Invicta, is a nickname in Portuguese meaning "invincible" - a whisky that won't be defeated. With luxurious blends of flavours such as blackberry, dried figs, cinnamon, nuts, and chocolate, this vibrant whisky offers a silky-smooth finish. The quality ex-oak casks previously held an assortment of ports, including Ruby, White, Tawny, and Madeira, which contribute to the whisky's viscous, oily, and silky texture.
