THE PERFECT PAIRIING
Every bottle of our Festive Cask comes paired with a whisky-soaked Traditional English Christmas Pudding, each with flavour notes hinting at the other, this makes for a perfectly paired festive experience.
Handcrafted using all Australian dried vine fruit and suet, this pudding delivers maximum richness and flavour, with no added colours or preservatives. The fruit itself is macerated for seven days in Callington Mill’s own whisky, for an authentic match. It’s a classic centrepiece that pairs beautifully with the indulgent layers of spice, fruit and warmth found in our Festive Cask. Together, whisky and pudding create a gift of pure celebration, designed to be savoured, shared and remembered.
TASTING NOTES
Colour: Deep, rich mahogany with slow, oily legs that cling to the glass- reminiscent of the glossy, brandy-soaked crumb of a traditional Christmas pudding.
Nose: Sweet and inviting with layers of spiced sultanas, marzipan, and dried prunes. A festive hint of steamed Christmas pudding rises through the glass-rich fruit, orange zest, and a gentle waft of warm brandy butter-while baked apple adds a subtle orchard warmth.
Palate: Bold and complex. A rich wave of dried fruits opens the palate before evolving into dry, spiced oak. Think of a slice of our Christmas pudding doused with our own whisky: dark raisins, candied peel, nutmeg, and a trace of brandied cream. A touch of bitter tannin provides balance, lending structure and depth.
Finish: Long and lingering. Jammy sweetness and an oily mouthfeel give way to a medium-dry finish with festive spice. A final whisper of aged tobacco and warm fruitcake rounds off the experience with sophisticated Christmas indulgence.
Cask: A mix of our finest Sherry and Port casks.
