DARK NIGHT EXPERIENCE 2026 (OATLANDS)

Step into the shadows this winter at Dark Night at Callington Mill Distillery — an exclusive, immersive dining experience inspired by the spirit of Dark Mofo. Your evening begins with a warm welcome cocktail, enjoyed fireside under the night sky, before moving indoors for a five-course shared feast designed to awaken the senses. As the night deepens, guests will take part in a rare and memorable ritual: the charring of a whisky cask.

STARTER:

Ember kissed Naan – butter soft bread brushed with smoked herb butter, served with mint & ash chili dips


MAINS:

Blue Eye Trevalla from the Undertow – grilled, with blood red chimichurri, zaatar spiced labneh, a wreath of mint & cilantro, and oil darkened by burnt herbs

Prawns of the Abyss – charred tiger prawns, miso romesco, shaved fennel crisps torn by a whisky vinaigrette

Quail in the Pyre – fire roasted, laid over eggplant hummus streaked with garlic & smoke, drizzled pomegranate molasses, over mixed greens

Smoked Cheeks of the Winter Swine – slow haunted over embers, with cauliflower purée and a sour sweet berry gastrique

Burnt Gem Lettuce – grilled baby gem Caesar, pangrattato like funeral crumbs, and grated parmesan


DESSERT

S'more of the Ritual Grounds – smoked chocolate cake with charred marshmallow & rocky road ice cream

Raspberry & White Chocolate Molten Heart – a bleeding centre of raspberry, veiled in white chocolate, finish with bloody chocolate anglaise and Raspberry Sorbet

• Cancellations made within 14 days of the event, no-shows, or last-minute modifications are non-refundable and will forfeit full payment
