El Sol is matured in ex-Sherry fortified wine casks from Jerez, Spain — casks previously used for a spectrum of celebrated Sherries including Oloroso, Pedro Ximenez, Amontillado, Palo Cortado, Fino and Moscatel. Each cask brings its own character to the spirit, layering complexity over time in Tasmania's cool highland climate.

Rich and smooth on the nose — dried fruits, creme brulee, coffee and dark chocolate. The palate is luscious and full-textured, with the warmth of Jerez de la Frontera woven through every sip. The finish is long, complex and deeply satisfying.
