2026 marks seven years since Callington Mill Distillery first set its sights on reimagining Australian whisky — and in that time, stone by stone and cask by cask, we’ve built something enduring. To honour this journey, we are proud to unveil the Callington Mill 7th Anniversary Release — a limited-edition single malt that celebrates the craft, the conviction, and the quiet revolution we’ve led from the heart of Tasmania.
This is more than a whisky. It is a tribute to the years behind us and a toast to the years ahead. Each anniversary release will mark another chapter in our evolution, capturing the character of that moment in time. The 7th anniversary bottling is our first in this series — rare, refined, and resonant with the Callington Mill Signature: elegant structure, layered complexity, and a spirit shaped with purpose.
From our first vision in Oatlands to global acclaim, this release stands as both memory and marker — a celebration of how far we’ve come, and a promise that the best is yet to come.

TASTING NOTES
Colour: Amber to mahogany.
Nose: Dried apricots and prunes drift out first, wrapped in old oak and fruit-cake spice, with a touch of freshly cracked almond.
Palate: An oily, weighty arrival marked by green oak and a firm nutty astringency. Walnuts and green almond mingle with unripe stone fruits, evoking the scent of antique wooden cabinets.
Finish: Oily and gently drying, medium in length, leaving behind nutty oak and the quiet presence of old furniture.
Cask: Our Seventh Anniversary release represents the DNA of our global oak journey - matured in premium American and European oak, enriched by first-fill Pedro Ximénez and Cream Sherry casks, before evolving for a further two years in rare Palo Cortado casks - a true reflection of our entire maturation philosophy.
